I actually made these to share with you all back in January.  I can’t believe it’s March now, time is flying by this year.   I’m not sure why I never finished the post, but better late than never!  I created a snack ball that wasn’t peanut butter based (although obviously not nut free).  They are so easy to throw together, and full of healthy goodness like oats & pecans.

Instead of nut butter, they are  held together by coconut oil, honey and the cranberries themselves.  All I did was rehydrate and soften part of the cranberries with boiling water, and give them a quick buzz with an immersion blender.  The cranberries are naturally sticky, so they worked for binding everything together.  After blending up the cranberry puree, mix all the rest of the ingredients in and shape into balls.  They firm up in the refrigerator (that’s the coconut oil hardening).  I like to give them at least 30 minutes chilling before diving into one.

These are perfect for afternoon (or midnight) snacks!  They are pretty sweet, between the cranberries and the honey, so I think it’s a nice alternative to traditional dessert.  Dried fruit and nuts are one of my favorite combos to snack on, but cranberries in particular since they are so inexpensive.  The other thing I usually add in is some dark chocolate… but that will be a recipe for another day 😉

Cranberry Pecan Snack Balls

  • 1/2 Cup Dried Cranberries
  • 2 Cups Quick Oats
  • 1/4 Cup Coconut Oil
  • 1/2 Cup Pecans (Chopped)
  • 1/4 Teaspoon Salt
  • 1/4 Cup Honey
  • 1/4 Cup Hot Water
  1. Pour hot water over 1/4 cup cranberries and allow to soak for 5 minutes.  Blend with immersion blender, until you have a cranberry puree. 

  2. Add oats, coconut oil, pecans, salt honey and remaining cranberries.  Stir well.

  3. Press the mixture tightly together into balls.  The recipe makes approximately 12-14  Refrigerate until firm.
